Why we ship olive oil only between October and March.

Extra-virgin olive oil is a fresh fruit juice. Most of its flavor and polyphenols are gone within a year of pressing. The village mills we work with harvest in October. By March, last year's bottles are quietly retired. You get the harvest, not the warehouse.

That's what source-first means. It's also why most grocery-store oil tastes like cardboard by the time it hits your pan.
